Notes from Zolo · Part 2 of 2 · The shop’s side of the bill

Where AED 100,000 of app sales actually goes

In part one we followed one order from the counter to your door and found AED 28 of quiet layers. Now flip the receipt over. Here is a realistic month for a small restaurant selling AED 100,000 through commission-based delivery apps, and how little of it survives.

Illustrative model, not any one platform’s terms. Exact fees vary by platform and contract; check your own statements.

The month, as a waterfall

The platform’s share comes out first, before the kitchen has bought a single onion:

A month of cooking, for

8.5%

profit margin, running efficiently

The costs nobody mentions

“The app takes 25%” is the polite version. Around the headline commission sit smaller charges that only show up in the finance report:

The cost of waiting for your own money

The platform collects the customer’s money and settles it periodically, often fortnightly, with fees deducted along the way. Meanwhile the kitchen pays suppliers, salaries and rent now. If a shop bridges an AED 50,000 gap with credit at an illustrative 10% a year, that is roughly AED 417 a month in financing cost. Not a fee the app charges, just the quiet price of someone else holding your till.

Why the menu goes up, and the loop closes

Faced with all of this, the shop does the only rational thing: the AED 30 burger becomes AED 38–40 on the app. Then the platform advertises “20% OFF!”, the customer pays AED 32 and feels clever, while the counter, all along, charged AED 30. Higher prices, big commissions and permanent discounts aren’t contradictions. They are the same machine, seen from three angles.

The same month on Zolo

Zolo’s entire model is a flat AED 149 a month: free until your first 100 delivered orders or six months, whichever comes first. No commission, no payment processing (you collect cash or card at the door, same day), no forced discounts, no sponsored slots, no device fees, no settlement wait.

AED 100,000 direct on Zolo
Shop keeps 99,851 · Zolo’s share is a flat AED 149
Stays with the shopCommission, fees, promotions

Run the same operating costs against that and the month ends near AED 44,900 instead of AED 8,500. To be fair about it: a young platform will not hand you an aggregator’s order volume on day one. The point is the unit economics: on Zolo, every order is profitable at the counter price, so growth never costs you your margin. And because you charge counter prices, your customers pay less while you keep more. That money has to come from somewhere; it comes from the layers.
